Preparing breakfast for a whole week!

Breakfast is the most important meal of the day.  You hear that everywhere.  Well I’m not a big breakfast person, I’m just not into eggs or sausage or any of that stuff.  But give me a big piece of good ol’ bacon and I love it!!

Fast forward to finding this Pinterest idea, let’s make breakfast sandwiches, and then make extras to save in the fridge for a week!  Changed a few things to our liking and this was our breakfast this morning and since I made 12 sandwiches, the rest are in the fridge for the rest of the week!

Step One:  Ingredients

Wheat English Muffins
Eggs
Cheese Slices
Bacon (We used Turkey)
Salt/Pepper

Add on’s:  You can add green peppers, onions or other things to your egg mix if you’d like.  I added Cholula Sauce to Chris’ eggs since he likes hot stuff.

Step Two:

Turn on oven to 375.  The blog I was reading said 350 but after reading the back of the turkey bacon, it said 375 so I just decided to go with that.  Plus I have a gas stove, so not sure that makes a difference.

Line the back up on a cookie sheet and try not to layer them.  This way they cook flat and are easier to stack on your sandwiches when your done.

Put in the oven and cook for 6 minutes.

Step Three:

While this is cooking, get a mixing bowl and mix 6 eggs.  One egg for each english muffin.  Since I made 12, I did 6 with hot sauce for Chris and 6 regular for me and the boys.  But I mixed them seperate.  After you mix them up, I added pepper in the eggs before I poured it into the muffin tins.  Spray the muffin tins with non-stick spray so it’s easier to get them out after it’s done cooking.

When the 6 minutes is up on the bacon, add the eggs to the oven and cook for an additional 10 more.  I had to add a minute or so because mine were still runny but I think it will just depend on your oven.  They will fluff up while cooking.

Step Four:

While all this is cooking, get your toaster out and start toasting the english muffins.  I got the wheat kind so we made this a little healthier with that and turkey bacon.  Toast all the muffins and get them laid out so when everything is done cooking you can start assembling them.

Step Five:

Once everything is cooked, take it out and let it cool a little bit.  Take the bacon off the cookie sheet and blot with a towel to get rid of some of the grease.  Then break the pieces into 2 so they fit better on the muffins.  Line the muffins with a slice of cheese, (again, you can use what kind you want, I just had this from sandwiches from before) and start to get the eggs out of the pan.

 

Step Six:  Assemble and EAT!

Add the eggs and bacon onto the muffin and your sandwich is now complete!

They were very tasty!!  Brody said “Mom these taste like the ones at McDonald’s”  They sure did!  But cheaper and a little bit healthier too!

Since I made extra’s, I just made them all up, wrapped them in plastic wrap, and put them in the fridge for the rest of the week.  I marked the ones that had hot sauce in the eggs so Chris knows what ones are for him.  All this done and we have fast and easy lunch for Brody and Chris all week.  Caden wouldn’t eat one, he had his Cinnamon Toast Crunch still 🙂
