So I ordered groceries from Shipt today from Meijer, if you can tell since almost all my stuff is from Meijer. But since COVID-19, some things are hard to come by. So when I ordered everything to make stuffed shells, and my Shipt shopper messaged me to tell me they didn’t have any, I said well what other large noodles do they have. She said they only had lasagna noodles. Perfect, I found a recipe on Pinterest and here we are! Some nights, we just want a meal with no meat, and all these cheese are so yummy together, it was just what I was craving!

Easy 4 Cheese Lasagna Rolls
Stuffed with three cheeses, rolled up and smothered in a delicious tomato sauce, these Easy 4 Cheese Lasagna Rolls are perfect for meal prepping!
- 12 lasagna noodles
- 15 oz Ricotta Cheese
- 1 cup Cottage Cheese
- 3/4 cup Shredded Mozzarella Cheese divided
- 3/4 cup Shredded Parmesan Cheese divided
- 1 egg beaten
- 1 tsp oregano
- 1 tsp basil
- 1 tsp parsley
- 1/2 tsp salt
- 1/2 tsp pepper
- 24 oz Ragu Traditional
Instructions

Cook lasagna noodles according to package directions

Combine ricotta, cottage cheese, 1/2 cup mozzarella cheese, 1/2 cup of Parmesan cheese, egg, spices and salt and pepper in a bowl

Spoon 1/2 cup of the Ragu Traditional sauce in the bottom of a 9×13 pan

Lay out a lasagna noodle on a paper towel and put 2 tablespoons of the mixture on one end.

Roll up the lasagna noodle carefully and place in the 9×13 pan

Repeat this with all of the lasagna noodles

Top with the rest of the Ragu Traditional sauce

Sprinkle remaining 1/4 cup of mozzarella cheese and Parmesan cheese on top

Bake at 350 for 20-25 minutes, until cheese is melted
